Clean Eats are unprocessed foods that are good for your body without sugar, salt or oil. Sugar, salt, oil and processed foods are now known to cause inflammation in the body and many diseases as well. My friend, Linda, resides in California, has become an expert in this kind of "clean eating" and is sharing two variations of her favorite summer salad. The name comes from the fact that they are clean foods and basically whatever you have in your refrigerator! The trick to keeping these salads clean and light is one ingredient - Napa Valley Naturals Grand Reserve Balsamic Vinegar. Specially formulated by Napa Valley Naturals, it is a wonderful tasting, very thick balsamic vinegar that replaces the need for oil and salad dressing. Linda says these dishes can be whipped together in a flash if you cook 2 cups of quinoa and 2 cups of any kind of rice and freeze them in snack sized ziplock.
