Whenever we have guests at the lake, it's a given that there is a supply of Lake House Cookies in the freezer. I have added a few ingredients to a basic drop cookie recipe, and once the dough is made, these are a quick dessert to pull out of the oven and put smiles on their faces.
2 sticks unsalted Butter, softened
2 1/4 C. Flour
3/4 C. Sugar
3/4 C. Packed brown sugar
2 Eggs
1 t. Baking soda
1 t. Vanilla
1/2 Bag Semi-sweet chocolate chips
1/2 Bag Butterscotch chips
1 C. Quick cooking oats
In a mixing bowl, beat butter with an electric mixer on medium to high speed until smooth. Add about half the flour, the sugar, brown sugar, eggs, baking soda and vanilla to butter. Beat until combined. Beat or stir in remaining flour. Fold in chips and oats. Drop dough 2 inches apart on an uncreased cookie sheet. Bake in a 375 degree oven for 8-10 minutes or until edges are golden. Cool on cookie sheet for 1 minute. Then remove cookies and cool on wire rack. Makes about 48 small cookies.

I recommend freezing the cookies after they’re baked. And the bag size is the regular old fashioned size of chocolate chips and butterscotch chips. Sorry I don’t have one at my house right now.
