This is Granny Urban and her dog, Tidy, towards the end of her life. She is my mother's mother, and I'm sad our children never got to meet her. She passed away the first year we were married. So one of the ways to keep her story going is to pass on things like the wonderful food she used to fix.
Her sauerkraut recipe is a staple on my family's Thanksgiving table for as long as I can remember. When we got married, my husband's family adopted it for their holiday dinners, and they may even like it better than my family does! They ask me to bring it every time we get together with the Costellos over the holidays, and some of David's sisters have asked for the recipe time and again. I love it because it's super easy to make and adds a lot of yummy flavor to the standard Thanksgiving meal.
Granny Urban's Sauerkraut
1 one-pound package of bacon, cut up into small pieces and fried
2 large glass jars of sauerkraut, drained
Brown sugar to taste (I use quite a bit - around 1 1/2 cups)
Fry the pound of cut up bacon in a pan and keep the grease. Spray a 9 x 13 glass casserole dish with Pam and pour the contents of the two large drained jars of sauerkraut into the pan. Mix in the bacon and grease. Then add around 1 1/2 cups (give or take) of brown sugar to taste. Mix all together and bake in a 350 degree oven, covered with foil until warmed - around 30 minutes.
