Since our family has been in quarantine, we have been trying to think of fun dinners, and this one was possibly the most fun and easiest yet! We love covering the table with a cute roll of paper, and when we aren't dealing with Covid-19, we may even eat off the paper!
It's super simple to do - really! Start by adding the water, beer and a lemon cut in half to a giant pot. I actually have one with a strainer built in so that you can just lift it all out at the end. The ingredients are layered in the pot. Start by adding the potatoes to the water, beer and lemon once it comes to a boil. Let it cook for 12 minutes.
Next, add the Andouille sausage and cook for 5 minutes.
Then add the corn on the cob, cut either into two or three pieces, each. These cook for 7 minutes.
Finally, add the shrimp and boil for 4 more minutes. This prevents the shrimp from becoming tough.
Remove from the water and pour all ingredients onto a large platter or right onto the paper-covered table. Truly a family-style meal that is delicious and pleases everyone.
Ingredients:
1 1/2 lbs. Andouille sausage
2 lbs. Peeled large shrimp
6 ears Corn
1 Lemon
3 lbs. Red potatoes
1 c. Old Bay Seasoning
2 bottles or cans Beer
8 qt. Water
